BAKING POWDER BISCUITS  Marion Cunningham

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/3 cup solid vegetable shortening

1 cup milk

Makes about 14 biscuits

Position rack in center of oven and preheat to 425°F. Grease a 9- by 12-inch baking pan and set it aside. Put flour, baking powder, and salt into a large bowl and stir to mix. Add shortening, and rub together with the flour, making little crumbs. Add milk and stir with a fork to moisten.

Flour a work surface and your hands; scoop dough onto the counter; and knead it ten times. Pat dough into a 9 inch circle and, using a 2-inch round biscuit cutter, cut out biscuits. Transfer them to the baking pan, let them touch each other for biscuits with soft sides, and place them apart for crisper sides. Bake 12 minutes or until golden on top. Serve warm.
